If you are new to raw foods and curious to experiment, raw granola is a great place to begin. It can take the place of your regular breakfast cereal, providing a satisfying and nourishing way to start your day.

The foundation of raw granola is usually raw buckwheat, which has been soaked overnight and sprouted. Buckwheat is not actually a grain – it is a seed – but it has a similar nutritional profile as other grains. It is a good source of complex carbohydrates and fiber. Additionally it contains rutin; a bioflavonoid compound that helps to strengthen blood vessels.

I’ve tried quite a few different types of raw granolas – both store bought and homemade – but this granola recipe is my absolute favorite by far! The addition of papaya and coconut give it a fresh, tropical flavor and delightful chewiness. Pumpkin and sesame seeds add an extra crunch.

I like the combination of raw honey and coconut sugar in this granola. Coconut sugar enhances the flavor of the shredded coconut and honey contains enzymes that assist in the digestion of starches. But if you prefer you can substitute with your sweetener of choice such as agave nectar, maple syrup or date paste.

If you can’t get papaya in your area you could use any fruit you like such as mango, peach, pear or apple.

Tropical Papaya and Coconut Raw Granola

2 cups buckwheat, soaked overnight, then drained and rinsed well

1/2 cup raisins

1/4 cup sesame seeds

1/4 cup pumpkin seeds

1/2 cup shredded coconut

2 1/2 cups papaya, diced

1 teaspoon vanilla extract

2 tablespoons raw honey

2 tablespoons coconut sugar

1/2 teaspoon cinnamon

Place all ingredients into a large bowl and mix to combine everything well. (You can use your hands if you like.)

Spread onto mesh trays and put in the dehydrator at 105 degrees for 24-36 hours (or until dried completely). Once completely dried it will keep for at least a month in a sealed container.

I recommend serving this granola with a tropical fruit salad containing fresh papaya, mango and banana and some freshly made almond milk. This makes a power-packed breakfast when you have a busy day ahead of you and need a little more sustenance. And it just as perfect for a lazy Sunday morning brunch.
