I’ve been lucky to have access to some pretty good mamey sapotes here in Costa Rica lately. They only show up in the farmer’s markets every now and then, so I take the opportunity to enjoy them whenever I can.

If you’re not familiar with this amazing fruit you can read more about them in my recent post about mamey sapotes. In that post I promised to share with you a recipe for a smoothie made from mamey sapotes if I found myself with an abundance of them, so here it is!

Once sapotes get ripe they only really keep for a day at the most at room temperature. If you can’t manage to eat them all at once they will keep in the fridge for a few days or in the freezer for a few weeks. In this recipe I used frozen sapotes but if you have fresh ones they would be even better.

The yacon works beautifully with the flavor of the sapote but if you don’t have any you could try using raw agave or raw honey instead.

Mamey Sapote Smoothie

Serves 1

1 cup fresh or frozen mamey sapote

3/4 to 1 cup almond milk

1 tablespoon yacon syrup

1/2 tablespoon vanilla extract

Pinch of nutmeg

Place everything in the blender and combine until smooth. Adjust the amount of almond milk according to your preference.

I prefer to make my smoothies fairly thick. In fact, I often make them so thick I can eat them with a spoon, so they are more like a pudding but this is really a matter of personal preference.

If you prefer to keep your fat intake low, then you can also make a simple smoothie by blending sapotes with bananas and a little water. Alternatively leave out the water to create a delicious and nourishing raw pudding.

All of these options would be fantastic for breakfast, as a snack or even dessert. So if you experiment with mamey sapote smoothies or puddings let me know how you like them!
