You don’t need acidic, hormone-tainted dairy products to get your calcium. This soup is loaded with plant-sourced calcium in a form that is easily absorbable by our bodies.
Kale, parsley and spinach are notable sources of calcium, which is better absorbed when in the presence of vitamin C from the oranges (which also contain calcium).
2 oranges, peeled and chopped with seeds removed
1/3 cup sesame seeds, soaked for 2-4 hours
½ cup water
2 cups kale leaves
1 cup parsley (plus extra for garnish)
1/2 green apple
2 tablespoons green onion
1 tablespoon miso
1 tablespoon hempseed oil
2 tablespoons pumpkin seeds
Drain and rinse the sesame seeds and add to blender with oranges and water. Blend until smooth and creamy.
Add remaining ingredients except avocado and pumpkin seeds and blend until smooth. Add avocado and blend only as much as necessary to combine, adding extra water if necessary to achieve desired consistency. Taste and add salt if necessary.
Pour into individual serving bowls and garnish each portion with a tablespoon each of pumpkin seeds and chopped parsley, or crumbled flax crackers.
