Even when I was a young child I had a particular fondness for parsley. I distinctly recollect at least several occasions when I was around the age of three or four and attending social events with my family.

This was the seventies, when cheese cubes and colored pickled onions on toothpicks was considered in the realm of gourmet cuisine. I would automatically would reach for the parsley garnish, which quite amusing to the adults, but to me this was simply what grabbed my attention as being the most delicious food on offer.

Obviously my young instincts had not yet been corrupted and my body knew that parsley was good for me. To this day parsley is still one of my favorite herbs and I enjoy it often in salads, juices and green smoothies.
